Chicken with Ginger Scallion Oil

Steps

  1. Finely chop ginger and scallion and add to pan
  2. Season generously with salt
  3. Add canola oil to mixture
  4. Heat up ginger scallion oil until oil is sufficiently cooked
  5. Taste and season as needed
  6. In a separate pot, poach chicken in boiling water (try not to overcook so chicken is very tender)
  7. Slice chicken and serve ginger scallion oil in a separate bowl
