Carrot Cake

  1. Preheat oven to 350 degrees F
  2. Beat eggs, oil, sugar, and vanilla
  3. Mix in flour, baking soda, baking powder, salt, and cinnamon
  4. Stir in carrots
  5. Fold in pecans
  6. Bake 45 minutes
  7. Turn out cake from pan onto wire rack to cool
  8. Frost the cake once it is cool
