Blueberry Muffin
Ingredients
- 1.5 cups all purpose flour (important: do not pack flour when measuring or muffins will not be fluffy)
- 1/3 cup of granulated sugar
- 1/4 tsp salt
- 2 tsp baking powder
- 1/3 cup canola oil
- 1 large egg
- 1/2 cup milk
- 1.5 tsp vanilla extract
- 1 cup blueberries (frozen or fresh)
Steps
- Preheat oven to 400 degrees
- Mix dry ingredients in a bowl (flour, sugar, salt, baking powder)
- Mix wet ingredients in a different bowl (canola oil, egg, milk, vanilla extract)
- Add wet ingredients to dry ingredients
- Add blueberries
- Mix well, but do not overmix
- Place batter into 12 muffin cups
- Bake for 20 minutes
